Clam Chowder
 | 1/2 cup butter |
 | 1 cup clam broth |
 | 1/2 cup dry white wine |
 | 1 head cauliflower, steamed
and cut into very small pieces |
 | 1 tablespoon garlic |
 | 1 teaspoon salt |
 | 1/4 teaspoon black pepper |
 | 3 shallots, minced |
 | 1 1/2 cups clams,
canned with juice |
 | 3 cups heavy cream |
 | 4 slices of bacon, cut into
small pieces |
In a non stick 3 1/2 quart
soup pot, melt the butter. Add the bacon and sauté
until it begins to crisp. Add cauliflower,
shallots, and spices. Stir. Add the clam broth
and white wine and bring to a gentle boil. After
2 minutes reduce heat. Leave soup on
medium high heat. Add clams. Reduce heat to low.
Simmer for 5 minutes minutes.
In a small bowl pour the
cream. Slowly whisk in a ladle of the
broth from the soup pot. Do not add it all at
once or it will break the cream. Then slowly
drizzle the cream/broth mixture in the the main
pot. Stir regularly to prevent sticking. Heat
for 1 minute. Serve immediately.

The fastest and easiest way to clean your
microwave is to put2 cups of water in a bowl
and heat it in the microwave for a bout 10
minutes. Let it steam. The steam will loosen
up all the goop and it will wipe right up with
no scrubbing!

of butter? |

If the store's closed and you're out of butter
just take 7/8 cup of shortening plus a half a
teaspoon of salt to make a fast and easy
substitute.
