Clam Chowder
bullet1/2 cup butter
bullet1 cup clam broth
bullet1/2 cup dry white wine
bullet1 head cauliflower, steamed and cut into very small pieces
bullet1 tablespoon garlic
bullet1 teaspoon salt
bullet1/4 teaspoon black pepper
bullet3 shallots, minced
bullet 1 1/2 cups clams, canned with juice
bullet3 cups heavy cream
bullet4 slices of bacon, cut into small pieces

In a non stick 3 1/2 quart soup pot, melt the butter. Add the bacon and sauté until it begins to crisp. Add cauliflower, shallots, and spices. Stir. Add the clam broth and white wine and bring to a gentle boil. After 2 minutes reduce heat.  Leave soup on medium high heat. Add clams. Reduce heat to low. Simmer for 5 minutes minutes.

In a small bowl pour the cream. Slowly whisk in a ladle of the broth from the soup pot. Do not add it all at once or it will break the cream. Then slowly drizzle the cream/broth mixture in the the main pot. Stir regularly to prevent sticking. Heat for 1 minute. Serve immediately.
