Peanut Butter Delights (fudge)
bullet2 cups Splenda, granular
bullet1/2 cup heavy whipping cream
bullet1 cup peanut butter
bullet1 teaspoon vanilla
bullet2 tablespoons marshmallow cream

Mix Splenda and cream in a saucepan on the stove. Bring to a boil. Boil for no more than 45 seconds. Add remaining ingredients.  Remove from heat and whisk together until smooth. Place a sheet of wax paper on a cookie sheet. Spoon teaspoon size amounts onto the wax paper and let cool. 

Or pour into a small glass baking pan that has been VERY lightly sprayed with Pam. Let cool. Cut into squares. 

It's a good idea to make 2 or 3 batches at once an then store them in the freezer.  It will help you avoid grabbing a candy bar and cheating when you are craving something sweet. These are NOT for the first 4 weeks of the diet.  They are for on going weight loss.

Try a reversal diet if you are stuck with no weight loss for more than 6 weeks. Dr. Atkins recommends choosing another diet plan with specific guidelines. Go off low carb for 3-4 days and onto this other diet. Then return to low carb.  Then watch the scale reward your planning! Yea!

Store leftover carrots, onions, green beans, and peas in a Tupperware bowl or freezer bad. They'll come in handy for your next big pot of soup!
